Persephone’s Fig and Olive Tapenade

 Going back thousands of years, Greeks sought decadent ways to make use of their rich agricultural bounty. We have evidence of the use of culinary tools used to pound and grind herbs, olives, spices and even figs into pastes and rubs. This recipe is an adaptation of a paste made for a king, using figs, olives and herbs grown under the warm Mediterranean sun. Try it with goat cheese or glaze roast lamb; serve as a jam with roast garlic and artisan breads.
